Design of freshness indicators and their application for the development of smart packaging materials

Smart packaging materials are studied and developed with the aim to contribute to food waste reduction. The focus of the current research is on utilizing biopolymers (i.e., polyvinyl alcohol, starch, chitosan etc.) and naturally found pH-sensitive compounds (i.e., anthocyanins) to synthesize and characterize freshness indicators with the form of smart films. Smart films are ultimately tested inside the packaging headspace of perishable products (i.e., fish) to evaluate their ability to monitor food spoilage.
